So I had big plans for dinner folks. I had this cook new recipe to try, cool kitchen tricks to do, all sorts of fun stuff. But then I get a text, “Rolyno’s for dinner?”
I can never say no to pizza, right? So I decide I’m going to make it for lunch. No harm, no fowl. (I was making chicken, so it’s funny) But then I get another message. “I’m going to grab something to eat while I’m out.”
Well fine. I’m going to make it anyway.
I go into the pantry, and I’m missing the one ingredient I really cant sub, breadcrumbs. Well, shoot. Time for Plan B. I raid the refrigerator and scrounge up enough things for a family favorite:
I had just the right amount of things!
- Chilled pesto
- Roma tomato
Yes, that is cheese sticks. That’s what it called for, and that’s all I had. So, first things first. Grate that cheese!
Beautiful. It grates super well because it’s string cheese! It was a wonderful thing.
Then, cut those tomatoes.
Throw on that pesto
And cook uncovered for 25 minutes at 400 deg. Once the chicken is cooked through, add on the cheese and tomato and place back in the oven for 5-8 minutes, or until cheese is browned.
Quick, easy, and healthy(ish)
My Sous Chef was far too busy staring at this bird, wondering why mom could make it move, but she couldn’t.
Now to put it in the fridge and save it for dinner tomorrow! Because pizza always comes first.
