Guess What! I didn’t have what I needed to make BBQ chicken! What. A. Surprise. So, I had to rummage through my pantry and see what I could find. I found a packet of General Tso’s chicken! Perfect.
So, I used half the packet (I only had a 1/2 lb of chicken), and mixed it with the ingredients listed on the packet:
- Soy Sauce
I mixed it and waited for it to boil and thicken, which was surprisingly fast!
Once it thickened, I added the chicken strips and coated them as best as I could.
After that, I added some plain chicken, broccoli, and mushroom to a baking sheet. I had to add some plain chicken for my husband, he’s not a fan of Chinese food (I love me some Chinese food), so I needed to make sure he’d eat it!
Coat the veggies with olive oil and salt/pepper, and bake at 425 deg for 12-15 minutes
I threw a bag of steamable rice into the mircowave (such a huge time saver!) and tada! An amazing dinner that’s not too bad for you!
And the best part…
Stinky fell asleep in dads arms! I got to eat first and while it was hot!! Best day ever!
